    Hi to all, great to be back again.

     

    Need a tad bit of help finding a recipe for Pickled Eggs, with beets of course; canned beets will work fine.

    Flood in July took away much, including recipes.

    Hey there, this is a tried and true old recipe…

    8 eggs, hardboiled…  one 15oz can beets..  1/2 cup vinegar, 1/2 cup white sugar, 1/2 cup water…and the juice from the can…

     

    combine all your ingredients…. bring to a boil  , pour over eggs… beets and all… I keep mine in a big glass jar in the fridge… the longer they sit the better,  but you can eat them the next day…

    thanks Catsbirds for the recipe. son-in-law loves these and I want to make them for his B-Day.

    do you use white vinegar or apple cider vinegar?  Do you pour the liquid mixture hot over eggs or cooled down?

    I think I will make some tomorrow with some pickled beets. I haven’t done that for awhile.

    If you don’t have your home canned pickled beets in the pantry, here is a nice recipe using fresh beets. Makes a bunch. I am like Gran, I pop egs into my pantry pickled beets, in fact I just made some. They are so good sliced over fresh greens.

    OK, so is this correct Moly (did I get all ingredients)?

    PICKLED BEETS AND EGGS

    1 dozen hard-boiled medium eggs, peeled
    1 cup sugar
    1 stick cinnamon
    ½ t whole allspice
    1/4 t whole cloves
    1t pickling spice
    2 c apple cider vinegar

    Combine all ingredients except beets and eggs in a large sauce pot. Simmer 15 minutes. Cool and pour over sliced beets and whole eggs. Refrigerate (Adjust sugar and vinegar proportions to taste.)

    made CatsBirds recipe, they were flavorful but the whites were like rubber?

    I make pickled beets using all my leftover sweet pickle juice, especially from bread & butter pickles. I use canned beets but I save the juice for the eggs. I find like Maurmaur did when I put the eggs in pickle juice they get rubbery. This is the quick & easy or should I say lazy way to do them.
