    was wondering if me and DH made ours right today….anyone have a recipe….I made one quart different from the way he made his 8 qts…..just experimenting.

    I just chop up the heads layering with salt, crush them with a potato masher, let sit 30 minutes, keep going back and crushing til I get good juice going (pick heads after a rain in early morning if possible so they are juicy), pack in jars and loosely put the caps on in a pan to catch any drippage from fermenting. I think I used 3 1/2 tablespoons of salt to 1 huge head of cabbage or two small. I top it off with spring water if there isn’t enough juice to make sure its covered and check it weekly so it doesn’t go dry on the top. Once done I clean the rims and seal them up and put them in the fridge to keep the good bacteria there, if you process it kills that good bacteria.
