Christmas Harvest – Green Tomatoes

With all the preparations for Christmas, there has been little time to spend in my vegetable garden.  Thankfully, there isn’t much to do.

But, the weatherman has forecast our first freeze of the season in my zone 9a garden and I need to get my green bell peppers and tomatoes in.

I took my green peppers and diced them and froze them in freezer bags – they will last over 8 months in the freezer.  I’ll use them in my Mexican rice and pork carnitas over the next few months.

Now, what should I do with my green, unripened tomatoes?  I just couldn’t leave them outdoors to be ruined by the frost.

I could make a green tomato salsa OR I could set them out to ripen indoors.

What would you do with green tomatoes?

    I would probably divide them up and let some ripen in a paper bag, make some green tomato salsa, and use a few to make some fried green tomatoes to go with a meal. However, it’s going to be a while before I can get in my garden due to snow! Let me know how they turned out!

      Hi Shelby,

      Right now, they are on a baking sheet hanging out in the garage. I do hope they ripen soon. My husband and kids can’t quite believe that they will ripen. I’ll be sure to post the results.

    You can make a green tomato pie that tastes like mincemeat, and is so delicious.
    I have my mothers recipe from the 1930′s and would gladly send it to you if you like.
    You can also make the mincemeat and can it to use later.
    You also can hang the whole vine with the tomatoes still on it, upside down in a
    garage or a place that is sheltered from the cold and let them ripen slowly, until red.
    We used to do this every year in Wisc years ago.
